Easy Lemon Bread Recipe

 Lemon is my absolute favorite flavor in the summer time. As soon as I taste it, all I imagine is warm, sunny days. Maybe it is because of it's bright, yellow color or how light the flavor is. Either way it definitely adds a little bit of sunshine to life.

That's why when I saw this recipe for lemon bread in Taste of Home magazine I just knew I had to make it! It's super easy to make and all you need are ingredients you probably already have around your house.

Lemon Bread Recipe:
1/2 cups of butter
1 cup of sugar
2 large eggs
5 tbsp lemon juice
1 tbsp lemon peel
1 1/2 cup of all-purpose flour
1 tsp baking powder
1/8 tsp salt
1/2 cup of milk
1/2 cup of powdered sugar

Preheat the oven to 350 F and grease a 8x4 inch bread pan.

Mix together butter and sugar in a bowl until fluffy and smooth. Then add both eggs, 3 tbsp of lemon juice, and 1 tbsp of lemon zest. Mix together into well combined.

In another bowl, whisk together the flour, baking powder, and salt. Then add half of the first mixture to the flour mixture and stir well. Then add half the milk. Stir well. Repeat until all of the butter mixture and the milk is added. Stir together until smooth. 

Add the batter to the pan and bake for 45 minutes or until you can stick it with a toothpick and it comes out clean. 

While that's baking, mix together 2 tbsp of lemon juice and all of the powdered sugar. Once the bread is done remove the bread from the pan and place on a cooling rack. Pour the powdered sugar glaze over the bread and let cool.
